Italian Herb Tomato Bread

Don't you just love the smell of bread baking? I sure do! I believe making bread has a bad reputation due to it creating a huge mess, so many loaf pans, hours on hours of mixing, kneeling and rising. If you are looking for a simple, you came to the right place. Have I convinced you yet? If not, this recipe only takes about an hour to make and you won't be disappointed with the flavor. Shall we get started?
Step 1
Preheat your oven to 350F. I always make sure my oven is the first thing I do because if you forget about it, your food has to wait even longer to be cooked. It's not like an eternity before your oven heats up but it feels that way. Next, you want to grease your pan. You can choose to use a loaf pan but any baking dish you have should work. It just may not come out like a traditional loaf, but hey that's okay! I used this clear dish from IKEA!
Step 2
Grab a large mixing bowl so you can whisk together your flour, baking powder, baking soda and salt. You'll want to grab your cooking spoon, metal or wooden, for the next part. Add your egg, oil, milk and grated cheese. Your batter will be thick.

Step 3
Break out your food processor! You will combine chopped garlic, tomatoes, basil and oregano. 15 second pulses until there are no large pieces remaining. Mixture will not be completely soupy, there will be small pieces.
Step 4
After you've pulsed, you want to fold your tomato and garlic mixture into the batter. You will still have a thick batter.
Step 5
Scoop your batter into your pan. You will bake your bread for 45-50 minutes. I use a toothpick to determine when my bread is done. If the toothpick comes out clean (no bread on it), your bread is ready! If your toothpick does not come out clean, you will place your bread back in the oven for small amounts of time. (2 minute at a time, watching closely!) Once your bread is done, you will let it cool for 5 minutes and then transfer it to a wire rack.
There are different ways to store your bread. I wrap mine in foil and leave it at room temperature. You can store in an airtight container, if you choose.
